I'm new at making sourdough starters and breads. This is my first starter and its been growing for about two weeks now. I keep it on the counter and feed it once a day. Its rising beautifully and the color is healthy and consistent looking (no pink or orange streaks), but I have noticed that the past two days once it peaks, it doesn't smell sweet. It smells faintly of nail polish remover. What is the cause of this? Can I still use it to make my bread or do I need to start over? Am I maybe not feeding it enough?
