My starter is about 2 months old. First it was only whole wheat and then I moved to bread flour. Rising was superb and bread came out excellent. I have been keeping the starter in the fridge, depending on necessity I have been taking it out but usually no longer than a week.
About a week ago I took it out of the fridge however I was out of my usual flour and i feed the starter with flour intented for cakes, cookies, etc. And it did not double after the second feed. Bought again bread flour (different from the previous) and feed in a 1:2:2 proportion to replace the other flour. Since then the starter doesn’t double but bread still comes out good with a good rise. The taste and smell of the starter is also good.
I’m just worried that it’s not doubling. What could have happened?
