Thanks for all the great detailed advise. I’m in a similar situation as Catherine - lots of rise at the very beginning, then nearly flat, with a few bubbles, through day 7. At that point I read your advise to Catherine and started your second suggestion, 2:1:1 starter:whole wheat flour:water, once a day feeding. I’ve now done this twice but nothing much has happened. Could you estimate how many days it usually takes before it starts to ‘rise predictably’, as you say? And should the rise be a doubling, or close to it?
I’m already getting discouraged and trying to understand when it’s time to give up. Then possibly start again with the pineapple juice approach.
