Useful article. Unfortunately I've been hugely busy for the last month and neglected my old starter. I put it in the fridge knowing it would be good for a couple of weeks but it's been about four. Finally having time, I took it out this morning to find a layer of dark brown hooch. I've never had my stater get to this stage before and just wanted to check with you it should be OK. It looks almost identical to the picture you have in your article and there is nothing "off" about the usual sharp fermenting smell. There are no discernable mould blooms and no suspect orange or pink streaking or tint. I've stirred the hooch in and fed it again but your advice would be useful. Thanks.
