Hi! I have some questions about my starter. I got a mature starter from a friend and have been using it for about a week. Going wonderfully! Then yesterday something happened! I moved part of my starter to a clean jar to feed it, then ended up feeding the leftover. So now I have 2 jars of starter. I did open a new bag of flour yesterday but it is the same type/brand that I have been using. The only thing that I did differently (wasn't even thinking), I used hot water instead of room temperature (from the tap). This morning I went to feed my starters and they smelled a little off. I could definitely still smell the yeast but there was also a sour smell. Did I kill some of my yeast? It has risen wonderfully today still in both jars, I can smell the yeast still. I went to use one of the starters thinking it was back to normal but as I scooped some out I realized I could smell the sour smell again, so I just discarded/fed it. Saveable? How long before I can use it again? Help!
