Hi, I just got a KAF sourdough starter kit for my b-day. I live at 7,500 feet in the Sandia mountains of New Mexico. I don’t have air conditioning, so keeping the starter at 68-70 degrees for 24 + hours will be difficult, if not impossible. Would you recommend refrigeration starting tomorrow afternoon or leaving it out at a room temperature of 80 degrees in the afternoons? Please advise. Thanks so much! I’m super excited to start sourdough with one of your starters!!
