Hi Cherry, I'm so glad to hear your starter is up and running and you've been able to start baking bread! Great news! As far as your gummy structure goes, if you have an instant read thermometer you want to check for an internal baking temperature of between 190-195F (88-91C). Also, be sure not to cut into your bread until it is completely cool, as bread continues to "bake" as it cools and releases moisture.
