Thank you so much Barb for the detail reply - thats a lot of useful information! My starter magically doubled overnight on day 9 and it has been rising and falling regularly after each feed. I have even baked my 1st loaf this morning! Oven spring and crust are good but the crumb is a bit gummy...i wonder if I had underbake it a bit/ under ferment. I have a small oven that only goes up to 220C and I don't have a Dutch oven so I added ice to a tray in the bottom to provide steam. Will play around with my oven settings next time!
