Today was day 2 for my starter. I discarded and fed it in a 1:1:1 ratio in the morning (around 10am) and by 5pm it had peaked and begun to collapse. I (probably unwisely) took this as a sign that I should feed it again in the same ratio as before. It's now been almost 5 hours and my starter hasn't moved at all and it has developed a small layer of hooch on top. I know it is still likely redeemable, but I would like to know the best way to handle it. Should I go back to feeding it daily in the morning, or should I now wait until tomorrow (day 3) evening? Thanks!
