Hi Elaine, I suspect your 1:3:3 ratio of starter:water:flour (by weight) will work fine when you switch to twice a day feedings, at least during the summer months. Remember you want to aim to feed your starter when it's at its peak of rising, or just as it's begins to fall, so it's important to pay attention to your starter.

The goal is to find a twice a day feeding routine that allows you to replenish your starter when it's close to that high point of rising. In cooler weather this may mean increasing the percentage of starter to line up closer to a 1:1:1 ratio (by weight). Tweaking the percentage of starter is a tool that can help give you a little more control over the rate of fermentation. A smaller percentage of starter means less organisms consuming a relatively larger meal, which will take longer. A larger percentage of starter means more organisms, so fermentation will happen a bit more rapidly.
