Thank you Barb. I tried the 2:1:1 ratio after 24 hours (once a day feeding) yesterday and found this morning there's a thin layer of water on top. The 2:1:1 ratio that I used was 2 Tablespoon starter, 1 Tablespoon fresh spelt flour, 4 teaspoons water. I didn't weigh them, instead I used the info given on the smaller starter page which says 1 Tablespoon = 20g starter or 20 g flour, 4 teaspoons = 20g water. I'll use the scale in the next feeding and continue to feed this starter until I get a pineapple next week when I shop.
