I am currently on day 12 of making my own starter. I keep it in a glass jar covered with cling film on my kitchen counter, the temperature is probably between 20-25 Celcius. I feed it once a day always at the same time, with equal parts of strong white flower and water. Most days I discard all but about 2 tbsp and feed abut 50gr of each.
I don't think I killed it because it always has bubbles on the top and the smell is good. I made scallion pancakes with the discard yesterday which tasted good so I think overall it's good health. The problem I am having though is that it doesn't rise more than about 1-2cm, there is not enough activity so I have not been able to make a bread with it yet. Do you have any tips or ideas on what I am doing wrong?
