Thanks so much for the thorough reply! I really appreciate the information. I'm going to keep plugging away and will try to be patient.
One last question that I don't feel I've seen asked -- Is it crucial to wash your container in between discarding/feeding each time, at least while I'm trying to get a mature starter? I didn't see that in the King Arthur Starter recipe, but I've been doing that each time so that I can see if my starter rises. Is this not important? Or somehow contributing to my slow rise?
