Hi, my question has to do with the timing of using my ripe starter. This is an active and happy starter that has been well established. I keep it in the refrigerator when not baking. When ready to bake, I take it out and feed it to wake it up. This often takes a couple of feedings. My question: often times the starter has doubled and shows signs of being ready when I am not...due to timing of the recipe requirements or it being bedtime! How long can a ripe starter sit before being used? If I need to delay using my ripe starter for 4+ hours, do I need to discard and feed it again to keep it in prime condition? Thanks
