Hi! I bought a dried starter and reactivated two weeks ago. The seller said the starter was fed with all-purpose flour, but I fed the starter King Arthur's white whole wheat since that was all i could find in stores. It was doubling within the first four days within four hours. Activity slowed down a lot when I moved the starter to a bigger container. I decided to try gradually switching to King Arthur all-purpose flour to be consistent with what the seller had built the starter on. I'm now doing 75% all-purpose and 25% white whole wheat feedings 1x per day. It has improved a little, but is still only rising about 2/3 and over a much longer time (8.5 hours). Also, there is a very strong vinegar smell. Is there a way to increase activity? Did I mess up the starter by initially using a different flour type? Thanks
