Hi! I am now on day 13 of my starter and seeing no rise at all. I followed the KAF method pretty closely, as I started with KA WW flour on the first day and then switched to KA AP flour after. I fed 1:1:1 every 24 hours for the first three days, and then every 12 hours from then on out. I keep my starter either on the counter (about 75F) or in the oven with the light on (about >80F). I had a false rise and terrible smell on the first or second day, but ever since then, I have gotten no rise at all. I see surface bubbles on my starter, but very little bubbles throughout. It also smells quite sour (like expired dairy), but not sweet at all. Any suggestions on what to do? Should I give up and start over? Thanks so much!
