I’m hoping you can help me, my starter recently started acting funny. It’s a year old, and I’ve been daily feeding it for about 2 months as I’m baking every 2-3 days with it. Feeding AP flour. I never paid a ton of attention to exact ratios rather just eyeballing it, and it always grew really well, sometimes tripling in just a few hours.
Then after my last bake, I fed it and the next morning it had only grown about half volume. So I fed it again. And nothing. Today I’ve fed it twice, discarding all but ½ cup and weighing the ratios even leaving it in the oven with the light on for hours only to find nothing. Maybe one bubble and no rising. I’m not sure what possibly could have happened?
