Excellent article, I happened to stumble across this as I was searching for a solution to my 18-year-old sourdough starter (King Arthur supplied) that has begun to behave strangely. I haven't been taking care of feeding my starter as regularly as you have suggested throughout the years. I have only been feeding my starter once a week and then again just prior (the day before) to baking with it. What I have just encountered the last week is that my sourdough starter has completely stopped rising (no bubbles either) while I'm feeding it. There are no off colors or smells, and the hooch is nice and translucent (this might be a clue here the hooch has been separating from starter withing 3-4 hours of feeding). Any recommendations to bringing her back to her old self would be appreciated. I'd hate to throw out and old friend after an almost 20-year relationship.
