Hi Gretchen, it does sound like you've been saving and feeding the 1 cup portion of starter that you're meant to discard, but that shouldn't have caused any harm (other than possibly overflowing your jar). In fact, by saving a larger portion of starter you were essentially following the 2:1:1 ratio by weight that I recommended in my previous reply. However, just for clarification, you don't have to switch jars every time you feed your starter. Just keep in mind that our regular sourdough starter recipe involves discarding 1 cup (8 ounces, 227g) starter and feeding 1/2 cup (4 ounces, 113g). I hope I haven't confused you with all these numbers and ratios! The good news is that your starter is bubbling and heading in the right direction, even if you took a slightly different path along the way.
