Hi Sarah, I've never worked with the type of potato flake starter you have, but from my general experience with sourdough starters, making a mistake with a feeding is almost never fatal. You can correct for the proper proportion of ingredients the next time you feed the starter, and it should return to normal behavior within a few feedings.
