Hi Barb
I’ve had my stater for about 3 weeks now. It never rose. But I’ve made a couple of loves of bread that have been really good. They tasted great but they were small. I feed my starter everyday and keep it on the counter. It bubbles nicer but never rises.

My question is how many day can I safely leave it on the counter? I’m baking bread every 1-2 weeks. Do I need to refrigerate it between bakes?
