Hi Beth, I apologize for the delay in responding to your question! I don't think the band of liquid you describe represents anything foul or amiss, although it is a little unusual. It sounds to me like it may be related to your starter being slightly higher in hydration, as I have noticed that starters that are composed of more liquid than flour (by weight) are more likely to separate. However, I doubt this is anything to worry about, and it should be fine for you to continue on as you're doing. Good luck, and let us know how it goes!
