I started my starter a week or so ago, was seeing some bubbles but not a lot of activity, so I converted over to the Debra Wink method, using only whole grain wheat flour. It worked great, and I had two huge, solid rises and falls. I then converted back to the unbleached AP flour, feeding every 12 hours, and its again not rising, only bubbling in the 12 hr window. I'm keeping it in the oven with the light on, and feeding it at a 1:1:1 ratio. Its been about 2.5 days since I've converted back to unbleached AP.
Should I do a 50/50 blend of AP and whole wheat? Should I use solely whole wheat since thats what gets the rise and fall for me? Should I keep waiting and feeding it 1:1:1 every 12 hours with AP flour and just be patient?
