Hi there! Thanks for your great website! My starter is acting "unreliably" even though I keep a regular feeding routine. Last week, it was rising and bubbly, passed the float test, and I made great bread with it. This week, it has risen a bit, but has very few bubbles. (a few small bubbles on the side and a bit more on top) Should I just continue feeding it until it acts in a predictable manner? Or should I troubleshoot it? Or start over? Also, a lot is written about the float test, but very few tell you what to do if your levain fails it. Wait a bit more? Feed it again? Thanks again!
