Hi Chuck, Steve retired from KAF a few years ago, but he still holds a special place in our hearts! It sounds like your starter could use a few days of twice a day feedings at room temperature to rev it up. To achieve a more vigorous rise you ideally want to replenish (feed) your starter when it's at its peak of rising, or just beginning to fall. If you find your starter is collapsing significantly between feedings you might want to try giving it a relatively larger feeding, which will slow down the rate of fermentation. For example, if you normally feed with a 1 part starter : 1 part water : 1 part flour ratio (by weight), consider adjusting the ratio to 1:2:2, or even 1:3:3. The goal is to find a feeding routine (when you have your starter out of the fridge) that works for you, and allows you to replenish your starter when it's closer to the peak. Feeding like this for a few days should lead to more vigorous rising behavior. I hope this helps! Let us know how it goes!
