I started my sourdough two weeks ago. I fed it whole wheat for the first 4-5 days and am now using unbleached AP and feeding twice a day. It is very bubble but has not risen at all. Unfortunately, I have no more whole wheat flour and am not able to find any (I've been looking). Is it possible my starter is ready and just not rising? It's the consistency of brownie/pancake batter and I do have a scale so the measurements should be correct. I'm not sure what could be wrong! My house is cool, but I keep it in the oven with the light on when the temperature is below 68 degrees. Any help would be great! Thanks!
