Hi Jessica, you can continue with the 2:1:1 feedings, even with AP flour, but you may want to convert to maintaining a smaller starter to save on flour until you get your starter up and running. Maybe try something like 30g starter : 15g water : 15g flour for the next few days, or until the starter begins rising predictably (twice). Once your starter begins to rise, it's important to start feeding twice a day (which will further promote yeast development). You can also return to the 1:1:1 ratio of ingredients, but for most vigorous yeast activity you'll want to aim to feed your starter when it's at its peak of rising, or just beginning to fall. Sometimes this requires tweaking the ratio of ingredients, or you may end up feeding three times a day! Feeding your starter a larger meal (1:2:2 or even 1:3:3, by weight) will slow down fermentation and can help you find a feeding routine that works with your schedule and allows you to replenish the starter when it's closer to its peak. I hope this helps! Let us know how it goes.
