New (sourdough) mum here. I used a large jar for my starter and had great success - bubbling! delicious sour smell! - after 2 days but now I have hooch that I pour away before feeding. So far so manageable.
My question is - when I feed it after pouring the hooch away, MUST I discard some starter? What happens if I keep feeding it without discarding any starter till I’m ready to bake?
My signature loaf is Walnut and Poppyseed Bread; I was planning on using 2 cups of starter in there as it’s a purely wholemeal loaf and thus needs plenty of raising agent. Too much?
