I’ve been trying to make a sourdough starter for well over a month now. It gets bubbly, but it’s never risen more than 35-50%. I’ve tried all sorts of things from your tips and comments - switching back to whole wheat flour for a few days, using filtered water instead of tap water, keeping it in the oven with just the light on (and the door slightly open, since it’s a small oven). I still can’t get it to double in volume. It also smells a bit like nail polish remover. What am I doing wrong? Is it time for me to just give up?
