Hi Sarah, well, that's a new one on me! I've never heard of noisy starters, except in literature. I suppose it's possible the fermentation gases built up in your jar and caused the noise you heard, but I'm sure it was harmless. As long as your starter smells good and isn't displaying any worrisome mold or hues, then I wouldn't worry. I would, however, encourage you to give your starter a few hours at room temperature after feeding and before refrigeration. It's important to see some bubbling and fermentation before returning your starter to the fridge.
