Many thanks for the advice, Barb. I did persist and took half of the starter from the centre of container for the the next feeding. I’m pleased to say that the starter began bubbling healthily the very next day with no further evidence of brown or black specs. Four lovely loaves later, the family is enjoying this wonderful bread without any signs of ill-effect. Best wishes, Steve.
