Hi Peter, I've never tried to create a starter with buckwheat flour, but I did notice in this article that the author stated her buckwheat flour starter had a tendency to turn pink. A vinegary smell is not a bad sign, so I wouldn't worry about that. Just to make things easier on yourself, I would wait until you can get a hold of either whole wheat or whole rye flour to begin your sourdough starter journey. Good luck, and let us know how it goes!
