I am new to making sourdough bread. My starter seems to be active in the sense that it is very bubbly, but it doesn't seem to rise much. The consistency of it matches what I see in videos of mature starter, but this is my 3rd time baking with this starter and my dough never rises much. Not sure what I'm doing wrong. It rises in the oven a bit and the finished product has good air pockets and flavor, I'm just not sure why it isn't rising while proving. I refrigerate my starter and bake with it once a week. Is it maybe not mature enough yet and I should take it out of the fridge and go back to feeding it daily like I did when beginning the starter?
