About 6 months ago I got a sourdough starter from my favourite bakery. I don't use it much so I keep it in the fridge and refresh it weekly based on the baker's cookbook instructions (10g starter, 30g water, 50g flour). I love rye bread so have been using wholegrain rye flour. I keep two jars just for the starter, one is always clean and ready for each weekly feeding. This week, when I opened the jar, it was making a crackly, popping sound! Absolutely terrifying. No hooch at the top, no unusual smell or colours. Has my starter gone bad?!
