Hi Barb,

I started doing 1:1:1 feedings and the change was rapid and dramatic. It now takes at most 6 hours to double in volume. My bread results are still middling--some large holes but with a fairly dense crumb overall--probably more because of my method and shaping technique than anything to do with the starter culture itself.
