I followed the instruction for a sourdough starter and the first few days it was working great. I saw bubbles and smelled the "boozy" smell. But, now it has gone away. There are no more bubbles or "boozy" smell, but the rise & slight fall has continued. It has not passed the float test. I'm not sure what to do because I don't want to keep wasting flour and it has been about 10 days. I have used AP flour, for reference, and it is in a glass jar with lid and on the garden window sill.
