My starter wouldn't rise for over two weeks since I started it so I switched to the alternate feeding schedule/method and it started to double in volume the second day of switching. After two days of predictable rising, I switched back to 1:1:1 feeding with unbleached AP flour and it wouldn't double anymore (maybe rising 30% at the max). When the alternate feeding of whole wheat was doubling in volume, could I have used the starter to bake bread at that point or did I have to switch back to the 1:1:1 unbleached AP flour schedule?
