Hi Connie, I'm so glad to hear that your bumpy sourdough journey resulted in you finally being able to bake some beautiful sourdough loaves! I'm not exactly sure what the purple veins you observed are, but it doesn't sound like something I would want to mess with, particularly if you have a healthier-looking option. I did find this conversation on another website, that includes a photo that looks like what you might be dealing with. I would let that starter go and concentrate on the one that shows no such signs of discoloration. I think until you have unbleached all-purpose flour available I would continue to feed with either your freshly milled whole wheat flour or a combination of the whole wheat flour and the bleached AP. Once you have unbleached AP flour available, you can gradually transition to feeding with that flour. Good luck, and let us know how it goes!
