Hi Je Lo, I'm not familiar with the exact recipe you're following, but at some point it will probably benefit your starter to discard a portion of the starter with each feeding, or your starter will become dominated by sourdough waste, and your feedings will be insufficient. In addition, a starter that is maintained with equal parts by volume of flour and water tends to be thinner in consistency, which makes it more difficult for you to see the type of rising behavior we indicate in our recipe. I don't see any reason that you have to start over, but you might want to try feeding your starter according to our recipe and see if your starter responds to this change in routine. The consistency you're looking for right after feeding your starter with our recipe is a thick, but easily stirrable paste. Don't be surprised if your starter acts a little sluggish at first, since every time you change your starter's maintenance routine the organisms need time to adjust, but hopefully it will begin rising and bubbling within a few days.
