Hi Liza, your starter also sounds like a good candidate for the alternative feeding routine suggested to us by Debra Wink. This method will help save your flour, and will increase the acidity of your starter, which may help pave the way for improved yeast performance:
1. Feed only once a day.
2. Feed with whole grain flour, if available. If not, it's okay to use AP flour.
3. Feed 2:1:1, by weight. You can definitely reduce the size of your daily feedings, so I would discard all but 1/2 cup (4 ounces, 113g) starter and feed this 1/4 cup (2 ounces 57g) water and 1/2 cup (2 ounces, 57g) flour (whole grain preferred).
Once your starter is rising predictably with this feeding routine, then you can switch to the 1:1:1 ratio, AP flour and twice a day feedings we recommend in our regular sourdough starter recipe. Expect some delay each time you change your starter's feeding routine, but once it's rising predictably with this feeding method, then you should be good to go!

I hope this helps! Let us know how it goes.
