On second batch of starter and I thought my starter was ready (it had FINALLY doubled and had a nice bubbly top.... and it floated). So I attempted bread. The dough was sooo sticky and I couldn’t get it to form, even with adding flour and kneading (it was suppose to be a no-knead bread). So I tossed it. My starter also seemed to go backwards. It apparently rose so much overnight that it overflowed, then went back down to its original size: and it won’t float anymore. I’m so frustrated I just wanna toss it and quit. Please help.
I’m using equal parts to feed, twice a day. Flour I’m using is about 75% King Arthur flour and 25% rye flour.
