Hi Beverly, I apologize for the delay in responding to your question! Assuming your starter is now rising predictably with the whole wheat flour, 2:1:1 ratio, and the once a day feedings, then I would suggest switching to a combination of half whole wheat and half unbleached bread flour for the twice a day feedings and the 1:1:1 ratio. This may offer your starter a bit more nutrients, and make the transition to the new feeding routine a bit easier. Once you're able to find unbleached all-purpose flour (any brand will do for the feedings), then you can switch to all white flour. While other brands of unbleached AP are okay for feeding your starter, be sure to use our Unbleached All-Purpose or Bread flour when it comes time to bake your bread, as other brands of AP aren't high enough in protein for baking our bread recipes.
