Hi Liz, I'm sorry for the delay in responding to your question and hope by now your starter is rising consistently, and you're happily enjoying sourdough baking! Patience will win out in the end, but if you didn't introduce twice a day feedings when you switched to feeding with AP flour and the 1:1:1 ratio, then I would encourage you do so. Once the yeast becomes more active it benefits from more regular feedings, so it is important to step up your feeding routine at that point in the process. Let us know how it's going!
