Hi Shann, if your starter had been rising predictably prior to this last feeding, then it might have just been exposed to cooler temperatures, or maybe even rose and fell by the time you had a chance to observe its progress. I hope by now your starter has revived and is rising vigorously, but look for the starter to rise predictably before you consider it fully mature. I don't know the exact feeding routine you've been following, but I would stick to regular room temperature feedings until your starter is bubbling and rising in a consistent manner. Which doesn't mean you can't bake with it in the interim, but I would save the naturally leavened bread recipes for later. I hope this helps! Let us know how it's going.
