My starter has never quite got off the ground. The first few days there was some healthy rise and activity, but then it was sluggish, with barely a half inch rise, but some bubbles. I started with whole wheat flour and then started feeding it unbleached AP flour. I also never did twice daily feedings, and "paused" the starter for 5 days in the fridge. Tried to revive and put it on "pause" again in the fridge. After 5 days a grey layer forms at the top, but the smell is fine. Should I start over? Stir in the grey or skim and try reviving with whole wheat or rye? Thanks so much for your help, and all the great discard recipes!
