Hi! This page has been a great resource. I've been trying to get a starter going. Unfortunately, I misread the instructions and started out discarding only 4 ounces, and keeping and feeding the rest. That starter got bubbly but never really rose. So I discarded all but 137 grams and started doing the alternative feeding method laid out in the comments: 2:1:1. I have done 3 feedings 24 hours apart in this way with white whole wheat flour. After the 2nd feeding, the starter rose about two inches in the jar-- far from double, but definitely a rise. Now after the 3rd feeding, only 4 hours later it's already at 2 inches. So at what point is it safe to switch back to the 1:1:1 ratio? The instruction say when growth is "predictable" but what does that mean?
