I've been working on a new sourdough starter, and I just finished day 12. It is bubbly, but doesn't rise very much (at most 25%). I live in Bogota, Colombia, so it's high altitude with a cool climate. I feed it twice a day, with lukewarm water. I didn't know if there was anything more I could do to speed up the process?
