Rising problem: I have a starter that I started myself about 2-3 weeks ago. I'm getting bubbling and that nice sourdough smell but not the rising--maybe only rises about 1/4 instead of doubling. Feeding twice a day (most days but not every day), and just yesterday had to switch to bleached APF because no unbleached was available. I read your post about changing the feeding back to once/day using wheat flour--do you think that might help? Thanks!!
