I’m on day 17 with my starter and it still isn’t rising much at all. Lots of bubbles, and it sometimes has an alcohol smell when I go to feed it. I tried giving it a boost by adding some whole wheat to my twice a day feedings and it started rising, but as soon as I weaned it back to 100% AP it stopped rising again. I’ve also been keeping it in the oven with the light on, which I tested and it’s at about 80-82 degrees. Is it too warm? Is there anything I can do to help if rise more? I’ve also had to use a lesser quality flour because it was all I could find... could that be the problem?
