I have been trying to make a sourdough starter for about a week now. I am using King Arthur Whole Wheat flour exculsively. Unfortunately, I have not observed any bubbling since day 3 and my starter smells sour and somewhat stinky/cheesy.
This has been my feeding routine:
Day 1: 20 g flour, 20 g water
Day 2: 20 g flour, 20 g water (Started bubbling)
Day 3: Removed 40 g of starter and fed with 40 g flour, 40 g water (Still bubbling)
Day 4: Removed 60 g of starter and fed with 40 g flour and 40 g water (No bubbling)
Day 5: Removed 80 g of starter and fed with 60 g flour and 60 g water (No bubbling)
Day 6: Decided to try a 2:1:1 ratio of starter:flour:water. Removed starter until 120g remained in the jar and fed with 60 g flour and 60 g water (No bubbling)
Day 7: (No bubbling)
I have kept the temperature at ~75°F and I am using a jar with a 3¼" diameter. It is also worth mentioning that a 1 mm layer of hooch has appeared on the surface of the starter everyday since day 3, but there are no bubbles at all.
